To remember a successful salad is generally to remember a successful dinner; at all events, the perfect dinner necessarily includes the perfect salad.

While I don’t think Mr. Ellwanger is wrong when he refers to salad as being part of the perfect dinner, I think that is only true when you have a 3+ course meal. In fact, I’m a huge fan of just salad for dinner, or better yet, lunch.

I’ve used this for lunch (and breakfast) quite a bit recently and it’s really tasty. It’s also easy and while it does pack a punch calorie wise (especially on this Blood Sugar Diet), it’s really filling and overall pretty healthy. I really like Tesco’s Caramelised Onion Hummus but you can use whichever one you prefer or leave it out. I’ve used BF’s gluten free wraps as well as their Quinoa and Chia Seed Wrap. The gluten free wrap is 99 calories but the quinoa one is around 110, so if you are calorie counting, it’s something of which you should be aware. On my off days, I’ve been making this breakfast. I think it may definitely be up there in the Royalty of breakfasts. It’s delicious and I’m already wishing tomorrow was an off day because then I could eat this.

Whenever she stayed it was a weekend of catching up, tons of food and lots of experimentation. We would sit at my little tables, chopping boards and knives at the ready and prepare anything from curries to stir-fries to experimental desserts. Despite the readiness of our knives, our tongues tended to wag a bit too much and we’d end up taking forever to chop, instead sharing stories about our past and current lives, exchanging cooking ideas or discussing teaching achievements and problems.
