Fiesta Friday #169 Leftover Aubergine Rarebit Wrap

“How can people say they don’t eat eggplant when God loves the colour and the French love the name? I don’t understand.” ~ Jeff Smith, The Frugal Gourmet Recently, I shared my Aubergine Rarebit recipe, and now I’m sharing a leftover idea. I’ve used this for lunch (and breakfast) quite a bit recently and it’s really tasty. It’s also easy and while it does pack a punch calorie wise (especially on this Blood Sugar Diet), it’s really filling and overall pretty healthy. I really like Tesco’s Caramelised Onion Hummus but you can use whichever one you prefer or leave it out. I’ve used BF’s gluten free wraps as well as their Quinoa and Chia Seed Wrap. The gluten free wrap is 99 calories but the quinoa one is around 110, so if you are calorie counting, it’s something of which you should be aware. Fiesta Friday Healthy Recipe Challenge: Chicken, Almond, Pineapple and Spinach Pasta Salad.

What do you get if you cross an apple with a Christmas tree? A pineapple! ~ Christmas Cracker Joke. The following recipe evokes memories of summer picnics on the hill in the park under a blazing sun. All nine of us sitting on a picnic blanket munching at the different bowls of salads and treats we hauled up (ok, it wasn’t as far as the “haul” makes it seem – maximum a 10-15 minute walk  from our house) and running around playing chasing (tag) or stuck in the mud (a game where if you are caught you are “stuck” and have to stand with your legs wide so your rescuer can crawl under your legs to free you). I always loved this salad – the crunch of almonds, celery and cucumber complemented the softness of the peas, pasta and tomato,  The sweetness of the pineapple contrasted with the lightly fragrant chicken and other more savoury vegetables. Now, even in other recipes when I make chicken pasta salad I always want to add pineapple – they are married together …

Leftover Butternut Squash and Potato Cakes

Leftovers are one of my favourite things about Thanksgiving and Christmas and a little like Ross from Friends, I have my favourite post-Thanksgiving sandwich. If you haven’t seen that episode, watch the clip below. It’s hilarious.

I actually have leftover butternut squash I was saving for today to make with the leftover potatoes from our celebration yesterday…only to find out we literally have only turkey, ham and a few pieces of dessert left to eat. That’s never happened before. We usually would have a bit of everything so you can have a mini-Thanksgiving dinner for your lunch the next day, if you so desired. Needless to say , like Ross, disappointed isn’t an understatement.

Spicy Marinated Butternut Squash

A few months ago we celebrated my Mam’s birthday. My mam loves Mexican food – well probably more Tex-Mex, to be honest, and so I prepared a feast. We had so much food. I think we had two different types of rice – my Easy Dressed-Up Cilantro/Coriander Rice and Green Rice (will have to share some day but as it’s something that I only make, from a recipe book, on very special occasions that will be some time in the distant future), as well as chicken and beef, lots of veggies, burritos, tacos and salads. In two words: A FEAST! The chicken was from this recipe book that I bought for my sister a couple of years ago called Everyday Mexican and it’s a wonderful little book that includes aforementioned Green Rice  as well as this fantastic Chicken Fajitas recipe where the chicken is marinated in honey/maple syrup, oregano and chili-flakes.
