On my off days, I’ve been making this breakfast. I think it may definitely be up there in the Royalty of breakfasts. It’s delicious and I’m already wishing tomorrow was an off day because then I could eat this.

I remember how jealous my fellow-students would be when we would swan out on Wednesday evening for a nice long weekend. It was even better when my sisters and I were in boarding school (not as interesting as it sounds!) as we usually only came home every other Friday night, arriving very late and leaving fairly early on a Sunday, as in those days there weren’t many trains on a Sunday and we had at least a 4 hour journey ahead of us. “A trout in the pot is better than a salmon in the sea.”
One of my favourite Irish legends is the story about Fionn McCumhail (pronounced Finn McCool) and the Salmon of Knowledge. In this legend, Fionn was the apprentice to a very wise poet who had been trying to catch the salmon of knowledge for years. It was said that whoever ate this salmon would have all the wisdom and knowledge in the world. One day, while Fionn was still living with Finnegas, Finnegas finally caught the salmon. He gave the fish to Fionn to cook, admonishing him to not eat any. When Fionn brought him the cooked fish, he noticed something different about the boy. The salmon had gotten a blister whilst cooking, and Fionn had popped it burning his thumb in the process. He had then sucked his thumb and consequently, without this knowledge, had gained the wisdom of the salmon. Finnegas realised that Fionn was the one who had fulfilled the prophecy and so he ordered the boy to eat the remainder of the fish. Afterwards, anytime that Fionn needed to gain insight or wisdom he would suck on his thumb.

I don’t exactly remember the first time I had chorizo but I know it was after I finished college and moved back to Ireland. The way I remember it was that my friend, Alberto, invited me to join him at a Spanish dinner party that was held in one of the hotels in Temple Bar. For a nominal sum, you could drink as much wine and eat as much manchego cheese, crusty bread and cured meats as your heart desired. It was so much fun and I made a lot of friends through these dinners as well as discovering a lot about Spanish food and culture.
