I learnt how to do something similar at the Oriental Cooking class I took in 2008 with my sister, Smyles. It was an amazing class and I learnt so much about cooking different Asian dishes, techniques, and how to use spices I’d never even heard of at that point. Our teacher was from Malaysia and she taught us so much and so well that there are different things Smyles and I still make, to this day, that she taught us. The following recipe is kind of a mash up of different ones that she did with us, including a Saffron and Sultana rice that was incredibly tasty. Note: Hi everyone, I want to apologise first off as you’ve probably noticed I haven’t posted much this last month. New recipes will be a little scattered over the next few months as well as I am finishing up in Korea and moving home. At that time we had made these Pizza Baguettes, and we had decided to work on our long distance relationship by cooking together as well as reading stories. Well, since then, we’ve talked plenty and read plenty; but cooking is a little bit more of a feat than either his mom or I had originally contemplated. For one, we have to agree on a time and date that suits us both, and for two, I need to decide ahead of time what we are making, experiment by myself (if necessary), and then send the list of ingredients to The Jam’s mom. Consequently, we have only “cooked” together twice and both times we tried not only the traditional “Ants on a Log” snack but also different variations using different bases for the logs …

Teaching camp is a lot more work than normal day-to-day as I have to prepare a lot more material and put a different “teaching cap” on to make sure the kids have a lot of fun. I know my 3rd graders are having a blast but I’m not so sure about some of the older kids! Anyway, I’ve had to bring a lot more work home with me so I haven’t had much time to prepare food for dinner and lunches. Luckily, I came up with an amazing little salad that has been a lifesaver this week; it’s healthy, tasty, and best of all, assists with lowering cholesterol and improving digestion. Yay for legumes! After all, December is one of my favourite months—Christmas and my birthday rolled into one glorious wintry month! So, in honour of both those great events I have dedicated this month to Christmas inspired food. First up, things have been insane lately: before Thanksgiving even hit Korea, I had been sick almost a week. Now, it’s over two weeks later and this cold is hanging on with its icy toes. It doesn’t help that the weather has completely changed over the last week or so. Before Thanksgiving, the weather was a bit cold, but mostly decent and you could do things like go for an 8k walk. Since the 1st December, though, snow has hit on average 5 days out of 7. It’s much colder and this hasn’t helped me to recover at all—despite mostly staying inside, wrapped in a blanket, with the ondol (floor heating) and space heater on full blast. To top it all off, …
