First off, apologies for the delay in posting anything. To be honest, I’m still adjusting to life in Ireland and it’s hard to get used to managing my time properly. It’s very easy to watch a lot of Netflix and to spend hours upon hours reading. Thankfully, with Christmas here things are a little more busy and cooking-centric. However, any tips on time management and creating a proper blogging schedule would be HIGHLY appreciated. I feel as if I am wasting my year off instead of making the most of it.

To begin with, as any regular followers of this blog would know, I was planning to leave Korea and return to my native Ireland in August 2015. I had been planning to return to Ireland for about a month before heading off on the Camino in sunny Spain. The Camino is a very, very long walk and the route I was going to take was around 700km. I was going to have some friends join me at different points for a few days. After that, it was going to be a winter of study preparation in order to do a CELTA course in the spring, plenty of cooking, and tons of walking. Fat gives things flavor  – Julia Child Not long now! I can’t believe how close Christmas and my birthday are! I will keep this short this week as I know Christmas is coming and everyone (myself included) is busy finishing year-end projects and goals as well as trying to get everything ready for the festivities. This recipe came to me in a moment of inspiration the week of Thanksgiving. I was really sick, but trying to think of things I wanted to bring to our Thanksgiving dinner when this popped into my head. I ended up not having time to make it then, but I’ve been working on them since and I’m quite pleased with the result. These are easy to put together, and are based on the flavours and scents of this time of year—much like the Tomato, Orange and Lentil Soup from last week.
