Easy Dressed Up Coriander/Cilantro Rice

Happy Christmas and all the blessing of the season for 2016.

First off, apologies for the delay in posting anything. To be honest, I’m still adjusting to life in Ireland and it’s hard to get used to managing my time properly. It’s very easy to watch a lot of Netflix and to spend hours upon hours reading. Thankfully, with Christmas here things are a little more busy and cooking-centric. However, any tips on time management and creating a proper blogging schedule would be HIGHLY appreciated. I feel as if I am wasting my year off instead of making the most of it.

In My Kitchen – December 2015

I can’t believe another month has come and gone. 2015 is no longer creeping by but scurrying as fast as it can! Scurrying – that’s a great descriptive word, don’t you think? I love the image it conjures up – ants busy preparing for winter, squirrels hoarding as many nuts as they can and people running to and fro trying to get everything ready for the festive season fast approaching! As I totally missed last month due to flying out to Nebraska on a whim, I am going to include some of my October happenings as well. My kitchen has several little things that are making life a teensy bit easier and a little more exciting. Some of these things are in preparation of the aforementioned scurrying as Thanksgiving has just gone and Christmas is approaching. Others are a reminder of trips taken, festivities that have been had and recipes that have been tried and tested, some of which have been perfected. Hooray! Autumn is my favourite season, narrowly beating out winter (which has Christmas and my birthday, so it does still rock!) thanks to all the amazing food, the crisp, crunchy leaves, and Hallowe’en, not forgetting blazers, jumpers and snug cardigans. With the onset of autumn, my tummy revels in comforting soups, spicy curries and hearty casseroles.  I find that these help me to acclimate to any sharp changes in the weather and to remind me that my two favourite holidays are just around the corner. In My Kitchen – October 2015

Time absolutely flies. I am home now almost 3 months. It’s really hard to believe. Korea seems a bit elusive, and I simultaneously feel like it was a million years ago and that I am going back tomorrow. It’s hard to know if I am missing it yet – I miss my friends and having the chat but I don’t think I have fully realised I am not going back yet.  However, the positive about being home is being able to appreciate the weather a lot more than I did in Korea. Autumn in Korea can be gorgeous but where I live in Ireland I am surrounded by beautiful parks and most of the streets around me have trees lining them that produce some of the most gorgeous colours, so I am able to appreciate it a lot more! I love autumn even with the coolness and dampness. The crunch of leaves, tasty soups and everything Hallowe’en more than make up for the negatives! The below picture was taken at the National Botanical Gardens which is …
